Abstract

The paper deals with developing a mathematical model for a system of intelligent process control in brewing, focusing on the critical parameters of fermentation: temperature, pressure, and pH level. Mathematical models of the dynamics of the process of each of the parameters are given based on exponential dependencies, which allow for the description of the change of these values over time. The possibility of using PID regulators, neural networks, and fuzzy logic to control the process under study and the modeling that allows the optimization of beer production, improving its quality and reducing costs.
